Cook the Mixture
Cook over medium-low heat, stirring constantly with a wooden spoon until the mixture thickens and coats the back of the spoon (about 5-7 minutes). Do not let it boil.

Strain and Cool
Remove from heat and pour through a fine-mesh sieve into a clean bowl. Stir in the vanilla extract and a pinch of salt. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churn the Gelato
Once the base is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Add Amarena Cherries
Fold in Amarena cherries (about 1 cup, chopped) into the churned gelato just before transferring it to a container.

Freeze
Transfer the gelato to a container and freeze for at least 4 hours before serving.
