Gelato Base

Method

Gelato Preparation

  1. 1

    Prepare the Gelato Base

In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring constantly until the sugar dissolves. Do not let it boil.

  2. 2

    Add Flavorings

Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. Allow the mixture to cool to room temperature.

  3. 3

    Chill the Mixture

Once cooled, refrigerate the mixture for at least 2 hours, or until thoroughly chilled.

  4. 4

    Churn the Gelato

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  5. 5

    Add Amarena Cherries

Gently fold in Amarena cherries (about 1 cup, pitted and chopped) into the gelato mixture during the last few minutes of churning.

  6. 6

    Freeze the Gelato

Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
