    Make the Gelato Base

    In a saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Egg Yolks

    In a bowl, whisk together the egg yolks and the remaining sugar until pale and creamy.

    Temper the Egg Yolks

    Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly to temper the yolks.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

    Cool the Base

    Remove from heat, stir in the vanilla extract and salt, then let the mixture cool completely. Refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Once the base is chilled, churn it in an ice cream maker according to the manufacturer's instructions.

    Add Amarena Cherries

    During the last few minutes of churning, fold in Amarena cherries, chopped if desired, to evenly distribute them.

    Freeze and Serve

    Transfer the gelato to an airtight container and freeze for at least 2 hours before serving. Enjoy your homemade Amarena Cherry Gelato!
