Make the Fennel Ragout
In the same skillet, add the remaining tablespoon of olive oil. Add chopped fennel and minced garlic, and sauté for about 5 minutes until softened. Add diced tomatoes, chicken broth, thyme, and season with salt and pepper. Simmer for about 10-15 minutes until the ragout thickens slightly.

Cook the Seasonal Vegetables
In a separate pot, bring water to a boil. Blanch the seasonal vegetables for about 3-4 minutes. Drain and set aside.

Combine and Serve
Return the pork chops to the skillet with the fennel ragout. Cook for an additional 5 minutes until the pork is cooked through. Serve the pork chops on a plate topped with fennel ragout, alongside the blanched seasonal vegetables.
