Prepare the Mignonette
In a small bowl, combine diced strawberries, red wine vinegar, shallots, chopped mint, salt, and black pepper. Mix well and let sit for at least 15 minutes to allow the flavors to meld.

Prepare the Wood-Oven
Preheat your wood oven to a high temperature (around 500°F or 260°C).

Roast the Oysters
Place the Murder Point oysters on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Place the baking sheet in the wood oven and roast for about 5-7 minutes, or until the oysters are cooked through and the edges start to curl.

Serve
Remove the oysters from the oven and place them on a serving platter. Top each oyster with a small spoonful of Paddlefish caviar and a generous amount of strawberry mignonette. Serve immediately.
