Prepare the Mignonette
In a small bowl, whisk together the red wine vinegar, Creole mustard, minced shallots, and black pepper. Set aside to allow flavors to meld.

Roasting Oysters

Roast the Oysters
Preheat the oven to 400°F (200°C). Place oysters on a baking tray and drizzle with olive oil, then season with salt and pepper. Roast in the oven for about 8-10 minutes until they are heated through.

Top with Crab & Gorgonzola Mixture
Remove the oysters from the oven and carefully spoon the crab and Gorgonzola mixture on top of each oyster.

Final Roast
Return the oysters to the oven and roast for an additional 5-7 minutes until the topping is golden brown.
Serving

Serve the Oysters
Remove oysters from the oven and let cool slightly. Drizzle the Creole mustard mignonette over the oysters and top with a dollop of Bowfin caviar before serving.
