Prepare glass

Chill a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail, then discard the ice water just before assembling.

Mix base

In a cocktail shaker, add the fresh pink grapefruit juice, gin, simple syrup, fresh lime juice and grapefruit bitters (if using). Fill the shaker with ice until about two-thirds full.

Shake

Shake vigorously for 10–12 seconds until the outside of the shaker is well chilled and slightly frosted. This both chills and lightly dilutes the mixture for balance.

Strain over fresh ice

Fill the chilled highball glass with fresh ice (about 3/4 full). Double-strain the shaken mixture into the glass to remove pulp and small ice shards for a smooth texture.

Top with soda

Gently pour the chilled club soda down the side of the glass to preserve carbonation. Stir once lightly with a bar spoon (1–2 rotations) to incorporate the soda without flattening it.

Garnish and finish

Express the oils of a grapefruit wheel or twist over the drink then drop it in as garnish. Add a sprig of thyme or rosemary for an aromatic accent if desired. Serve immediately with a short straw.
