Beurre de Cacao Preparation

Melt and emulsify

Gently melt the beurre de cacao in a small heatproof bowl over a warm water bath (double boiler) until just liquid. Remove from heat and let cool slightly (maintain it liquid but not hot).

Whisk or blend the melted cocoa butter with the neutral high-proof spirit (or vodka) until a smooth, pourable emulsion forms. If needed, use an immersion blender for 10–20 seconds to achieve a stable, slightly opaque emulsion. The spirit helps thin and stabilize the cocoa butter so it can be used as a finishing rinse/splash.

Allow the emulsion to rest at room temperature for 5 minutes so any large bubbles dissipate. Keep warm (not hot) if it begins to solidify; a warm water bath set to low is fine.

Cocktail Assembly

Stir the base

Add the gin, sweet vermouth and Campari into a mixing glass filled with plenty of fresh ice. Stir gently and steadily for 20–30 seconds (about 15–20 full turns) until the mixture is well chilled and properly diluted.

Prepare the glass

Place a large ice cube into a chilled Old Fashioned glass (or coupe if preferred). If you want extra sheen, briefly rinse the inside of the glass with 2–3 ml of the beurre de cacao emulsion and discard excess so a thin coating remains.

Strain the stirred Negroni mixture over the large ice cube in the prepared glass using a fine strainer to remove any small ice chips.

Finish with beurre de cacao

Using a spoon, gently drizzle approximately 5–7 ml of the beurre de cacao emulsion over the top of the cocktail so it sits briefly on the surface and imparts a silky, cocoa-butter aroma. If desired, use the back of the spoon to coax the emulsion into a thin film across the surface.

Express the orange peel over the drink to release oils, rub the peel around the glass rim and drop it into the drink as garnish. Optionally grate a small dusting (about 1 tsp) of orange zest over the top for extra fragrance.
