Prepare the Patty
In a bowl, mix the ground beef with salt and black pepper until well combined. Form into an 8 oz patty.

Mix the Sauce
In a mixing bowl, combine mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, and onion powder. Stir until smooth and set aside.

Add Sugar and Vinegar
Stir in the brown sugar, apple cider vinegar, and salt. Reduce heat and let simmer for 15-20 minutes, stirring occasionally until thickened.
Assembling the Burger

Assemble the Burger
Slice the brioche bun in half. Spread a generous amount of special house sauce on the bottom half. Place the cooked patty on top, followed by a slice of provolone cheese, a spoonful of onion jalapeno jam, and sliced pickles. Top with the other half of the bun.
