Choux Pastry

    Prepare the Dough

    In a medium saucepan, combine the water, unsalted butter, and salt. Heat over medium heat until the butter is melted and the mixture comes to a boil.

    Add the Flour

    Remove from heat and quickly stir in the all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate the Eggs

    Allow the dough to cool slightly. Add the eggs one at a time, mixing well after each addition until the dough is smooth and shiny.

    Pipe the Choux

    Preheat the oven to 400°F (200°C). Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1 tablespoon each) onto a baking sheet lined with parchment paper, leaving space between each mound.

    Bake

    Bake for 20-25 minutes until puffed and golden brown. Remove from the oven and allow to cool completely.

Filling

    Fill the Choux

    Once the choux puffs have cooled, carefully slice them in half. Fill each half with a generous scoop of vanilla ice cream.

Chocolate Sauce

    Make the Sauce

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and stir in the semi-sweet chocolate chips and vanilla extract until smooth and fully melted.

    Serve

    Drizzle the warm chocolate sauce over the filled profiteroles before serving.
