Method

Preparation

  1. 1

    Prepare the Spices

Crush the cardamom pods and black peppercorns using a mortar and pestle or a rolling pin. Slice the ginger root into thin pieces. Set aside.

Brewing

  1. 2

    Boil the Water

In a medium pot, bring 4 cups of water to a rolling boil over high heat.

  2. 3

    Add Spices

Once the water is boiling, add the cinnamon sticks, crushed cardamom, cloves, sliced ginger, and crushed black pepper to the pot. Stir gently.

  3. 4

    Simmer the Mixture

Reduce the heat to low and let the spice mixture simmer for about 10 minutes to infuse the flavors.

  4. 5

    Add Tea Leaves

After simmering, add the black tea leaves to the pot and continue to simmer for another 5 minutes.

  5. 6

    Strain the Mixture

Remove the pot from heat and strain the mixture through a fine mesh sieve into another pot or large bowl to separate the tea from the spices.

Final Touches

  1. 7

    Add Milk and Sweeteners

Return the strained chai to the pot over low heat. Add 2 cups of milk, honey, and sugar. Stir well until everything is combined and heated through.

  2. 8

    Serve

Pour the Mountain Chai into cups and serve hot. Optionally, garnish with a sprinkle of cinnamon or a piece of ginger for extra flavor.
