Deglazing
Pour in the dry white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes until reduced slightly.

Adding Broth and Seasoning
Add beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Preparing the Toppings
While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast them in the oven for about 10 minutes or until golden.

Assembling the Soup
Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place the toasted baguette slices on top, and generously sprinkle with Gruyère and Parmesan cheese.

Broiling
Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
