Soup Base

Method

Soup Preparation

  1. 1

    Caramelizing the Onions

In a large pot, heat the butter and olive oil over medium heat. Add sliced yellow onions and cook, stirring occasionally, until they are deeply caramelized and golden brown, about 25-30 minutes.

  2. 2

    Adding Garlic

Once the onions are caramelized, add minced garlic and cook for an additional 2 minutes until fragrant.

  3. 3

    Deglazing

Pour in the dry white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes until reduced slightly.

  4. 4

    Adding Broth and Seasoning

Add beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Serving

  1. 5

    Preparing the Toppings

While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast them in the oven for about 10 minutes or until golden.

  2. 6

    Assembling the Soup

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place the toasted baguette slices on top, and generously sprinkle with Gruyère and Parmesan cheese.

  3. 7

    Broiling

Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.

  4. 8

    Serving

Carefully remove the bowls from the oven and let them cool slightly before serving. Enjoy your French Onion Soup hot!
