Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease six ramekins with butter and dust with cocoa powder to prevent sticking.

Making the Batter

  1. 2

    Melt Chocolate and Butter

In a medium saucepan, melt the unsalted butter and dark chocolate over low heat, stirring occasionally until smooth. Remove from heat and let cool slightly.

  2. 3

    Combine Eggs and Sugar

In a large bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and slightly thickened.

  3. 4

    Mix the Batter

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously. Add the vanilla extract and mix well.

  4. 5

    Add Dry Ingredients

In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the chocolate mixture until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake the Fondants

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center remains soft.

Serving

  1. 8

    Cool and Serve

Let the fondants cool for 1 minute before carefully inverting them onto plates. Dust with powdered sugar, and serve warm with fresh berries and a scoop of vanilla ice cream if desired.
