Prepare the Meat Mixture
In a large mixing bowl, combine the ground beef, Dijonnaise, chopped parsley, minced garlic, finely chopped onion, salt, black pepper, egg, and breadcrumbs. Mix everything together until well combined, but do not overmix.

Create the Patties
Take a portion of the meat mixture (about 2 tablespoons) and flatten it in your hand. Place about 1 tablespoon of grated Gruyere cheese in the center, then fold the meat around the cheese to form a ball. Repeat this process until all the meat mixture is used.

Cook the Boulettes
In a large skillet, heat the olive oil over medium heat. Once hot, add the meat boulettes in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until they are browned and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
