Method

Prepare the Pasta

  1. 1

    Cook the Fettuccine

In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Prepare the Prawn Brunoise

  1. 2

    Sauté the Aromatics

In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped shallots and sauté until fragrant and translucent, about 2-3 minutes.

  2. 3

    Cook the Prawns

Add the prawns to the skillet and cook until they are pink and opaque, about 3-4 minutes.

  3. 4

    Add Vegetables

Stir in the diced red bell pepper and zucchini, cooking for another 2-3 minutes until softened.

  4. 5

    Create the Sauce

Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and season with black pepper to taste. Cook until the sauce thickens slightly.

  5. 6

    Combine with Pasta

Add the cooked fettuccine to the skillet, tossing to coat the pasta with the creamy prawn brunoise sauce. Adjust seasoning if necessary.

  6. 7

    Garnish and Serve

Remove from heat, sprinkle with chopped parsley, and serve immediately.
