Method
Preparing the Filling

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until onions are translucent.

Add Spinach and Seasoning
Stir in the fresh spinach, thyme, salt, and black pepper. Cook until the spinach wilts. Remove from heat and let the mixture cool.
Assembling the Wellington

Preheat Oven
Preheat your oven to 200°C (400°F).

Roll Out Pastry
On a floured surface, roll out the puff pastry sheets to create a large rectangle.

Fill Pastry
Place the cooled vegetable mixture in the center of the puff pastry. Fold the edges over to enclose the filling completely.

Bake
Place the Wellington on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
