Prepare the Pear Purée
Peel and core the fresh pears. In a blender, combine the pears, lemon juice, sugar, vanilla extract, cinnamon, and nutmeg. Blend until smooth. If the mixture is too thick, you can add a tablespoon of water to help blend.

Strain the Purée
Pour the pear purée through a fine mesh strainer into a bowl to remove any pulp or fiber. Use the back of a spoon to press the purée through the strainer for maximum yield.

Mix the Bellini
In a champagne flute, add about 2-3 tablespoons of the pear purée. Slowly top with chilled prosecco, pouring gently to avoid overflow.

Garnish and Serve
If desired, sprinkle a pinch of cinnamon or nutmeg on top for garnish. Serve immediately and enjoy!
