    Prepare the Crust

    In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

    Make the Filling

    In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add sour cream and vanilla extract, mixing until combined. Add eggs one at a time, mixing well after each addition. Gently fold in the milk chocolate chips.

    Bake the Cheesecake

    Pour the filling into the prepared crust and smooth the top. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.

    Chill the Cheesecake

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.

    Add Toppings

    Before serving, drizzle caramel sauce over the top of the chilled cheesecake. Sprinkle pecan halves and drizzle melted milk chocolate over the caramel.
