Mousse Preparation

Prepare Gelatin
In a small bowl, sprinkle gelatin over cold water and let it sit for about 5 minutes until it blooms.

Combine Ingredients
In a large mixing bowl, whisk together the pureed strawberries, Greek yogurt, and powdered sugar until smooth.

Whip Cream
In a separate bowl, whip the heavy cream until soft peaks form.

Heat Gelatin
Gently heat the bloomed gelatin in the microwave for about 10 seconds until melted, then fold it into the strawberry yogurt mixture.

Combine Mixtures
Fold the whipped cream into the strawberry yogurt mixture until combined.

Spoon the mousse into serving glasses and refrigerate for at least 2 hours or until set.

Cook Raspberries
In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 5-7 minutes.
