Ravioli Dough

    Make the Dough

    In a large bowl, combine flour and salt. Make a well in the center and crack in the eggs. Gradually mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Filling

    Prepare the Filling

    In a saucepan over medium heat, sauté the spinach until wilted. Remove from heat and let cool. In a bowl, mix ricotta, Parmesan, nutmeg, salt, black pepper, and the cooled spinach. Set aside.

Assembling & Cooking

    Assemble the Ravioli

    Roll out the dough thinly on a floured surface. Cut into squares, place a teaspoon of filling in the center of each square, then fold over and seal the edges with a fork.

    Cook the Ravioli

    Bring a large pot of salted water to boil. Cook the ravioli in batches for about 3-4 minutes until they float to the top. Remove with a slotted spoon.

Sage Butter Sauce

    Make the Sage Butter Sauce

    In a skillet over medium heat, melt the butter. Add sage leaves and cook until they are crispy and the butter is slightly browned. Remove from heat.

Serving

    Serve

    Place the cooked ravioli on a plate, drizzle with sage butter, and sprinkle with pecorino Romano cheese. Enjoy!
