Method

Sous Vide Pork Tenderloin

    Prepare the Pork

    Season the pork tenderloin with salt, black pepper, garlic powder, and chopped fresh rosemary. Drizzle with olive oil and rub the spices into the meat.

    Sous Vide Cooking

    Place the seasoned tenderloin in a vacuum-sealed bag and sous vide at 145°F (63°C) for 2 hours.

    Sear the Pork

    After cooking, remove the pork from the bag, pat dry, and sear in a hot pan for 1-2 minutes on each side until golden brown.

Honey Roasted Carrots

    Prepare the Carrots

    Preheat the oven to 400°F (200°C). Peel and cut the carrots into sticks.

    Roasting

    Toss the carrots with honey, butter, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.

Cauliflower Puree

    Cook the Cauliflower

    Chop the cauliflower into florets and steam until tender, about 10 minutes.

    Blend

    In a blender, combine the steamed cauliflower, butter, cream, salt, and pepper. Blend until smooth and creamy.

Confited Onions

    Prepare the Onions

    Slice the onions thinly.

    Confiting

    In a saucepan, heat the olive oil over low heat. Add the onions and salt, cooking slowly for about 30 minutes until soft and caramelized.
