    Cook the Potatoes

    In a pot of boiling salted water, add the organic potatoes and cook until fork-tender, about 15 minutes. Drain and let cool, then slice into rounds.

    Blanch the Green Beans

    In the same pot of boiling water, add the green beans and cook for 3-4 minutes. Drain and immediately plunge into ice water to stop the cooking. Drain again and set aside.

    Sear the Ahi Tuna

    Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the ahi tuna steaks with salt and black pepper. Sear the tuna for about 1-2 minutes on each side for rare, or longer if desired. Remove from heat and let rest before slicing.

    Prepare the Salad Dressing

    In a small bowl, whisk together the remaining olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until emulsified.

    Assemble the Salad

    In a large bowl, combine the sliced potatoes, gem tomatoes, green beans, and parsley. Drizzle with the dressing and toss gently to combine.

    Serve

    Plate the salad and top with sliced seared ahi tuna. Serve with lemon wedges on the side.
