Preparation of Bone Marrow

    Prepare and Roast the Bones

    Preheat the oven to 450°F (230°C). Place the beef marrow bones on a baking sheet, cut side up. Season with sea salt and black pepper. Roast in the oven for about 15-20 minutes, or until the marrow is soft and begins to separate from the bone.

Making Caramelized Onion Jam

    Caramelize the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced onions and salt, cooking slowly until they are deeply caramelized, about 20-25 minutes. Stir in the brown sugar and balsamic vinegar, cooking for an additional 5 minutes. Remove from heat and set aside.

Preparing Horseradish Sauce

    Mix the Sauce

    In a small bowl, combine the prepared horseradish, sour cream, lemon juice, and salt. Mix well and fold in the chopped chives. Adjust seasoning to taste.

Making Crostini

    Prepare the Crostini

    Brush the baguette slices with olive oil and place them on a baking sheet. Toast in the oven for about 5-7 minutes, or until golden brown and crisp.

    Arrange the roasted bone marrow on a platter, accompanied by caramelized onion jam, horseradish sauce, crostini, and a salad of arugula dressed with olive oil, lemon juice, salt, and pepper.
