Gnocchi Preparation

Make the Gnocchi Dough
In a mixing bowl, combine ricotta cheese, activated charcoal powder, egg, and salt. Gradually add the flour until a soft dough forms. Be careful not to overwork the dough.

Shape the Gnocchi
On a floured surface, roll the dough into long ropes about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.

Add Broth and Simmer
Pour in the vegetable broth, season with salt and pepper, and let simmer for an additional 5 minutes until slightly thickened.

In a large bowl, toss the cooked gnocchi with the mushroom fricassee. Serve topped with fresh arugula, coppa slices, and shaved truffle pecorino cheese.
