Preheat the Oven
Preheat your oven to 325°F (160°C).

Mix the Cream and Pumpkin
In a medium saucepan, combine the heavy cream, pumpkin puree, and sugar over medium heat. Stir until the mixture is smooth and heated through, but do not let it boil.

Whisk Egg Yolks
In a mixing bowl, whisk together the egg yolks, vanilla extract, pumpkin pie spice, and salt until well combined.

Combine Mixtures
Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.

Bake the Custards
Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins. Bake in the preheated oven for about 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle about 1 teaspoon of granulated sugar evenly over the top of each custard. Using a kitchen torch, caramelize the sugar until it forms a crispy, golden crust. Let the brûlée sit for a minute to harden.
