Prepare the Gnocchi

    Cook the Potatoes

    Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.

    Make the Dough

    Peel the potatoes and mash them in a bowl. Add flour, egg, and salt. Mix until a soft dough forms.

    Shape the Gnocchi

    Divide the dough into sections, roll each section into a rope about 1/2 inch thick, then cut into 1-inch pieces. Press each piece with a fork to create grooves.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float, about 2-3 minutes. Remove with a slotted spoon.

Prepare the Sauce

    Sauté the Mushrooms

    In a skillet, melt butter over medium heat. Add minced garlic and sliced oyster mushrooms. Sauté until mushrooms are tender.

    Make the Cheese Sauce

    Lower the heat and stir in the heavy cream and smoked Gouda cheese until melted and creamy. Season with salt and pepper.

Combine and Serve

    Mix Gnocchi with Sauce

    Add the cooked gnocchi to the skillet with the cheese sauce. Toss to coat the gnocchi evenly.

    Prepare the Topping

    In a small bowl, combine bread crumbs, Parmesan cheese, olive oil, and parsley. Sprinkle over the gnocchi.
