Poached Pears

Olive Oil Cake

Method

Poaching Pears

  1. 1

    Prepare the Poaching Liquid

In a saucepan, combine water, sugar, vanilla extract, and cinnamon stick. Bring to a simmer over medium heat until the sugar dissolves.

  2. 2

    Poach the Pears

Peel the pears, leaving the stems intact. Add them to the simmering liquid and poach for about 20-25 minutes, or until tender. Remove from heat and let cool in the liquid.

Olive Oil Cake

  1. 3

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 4

    Mix Dry Ingredients

In a bowl, whisk together flour, sugar, baking powder, and salt.

  3. 5

    Mix Wet Ingredients

In a separate bowl, beat the eggs, then add the olive oil and milk, mixing until smooth.

  4. 6

    Combine Mixtures

Gradually add the wet mixture to the dry ingredients, stirring until just combined.

  5. 7

    Bake the Cake

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let cool.

Assembly

  1. 8

    Layer the Verrine

Cut the olive oil cake into small cubes. In serving glasses, layer the cake cubes, followed by slices of poached pear. Repeat the layers until the glasses are filled.

  2. 9

    Garnish

Top with chopped nuts if desired and garnish with a sprig of fresh mint.
