Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

Combine Mixtures
Add the wet mixture to the dry ingredients and stir until just combined. Fold in the grated parsnips.

Bake the Cake
Divide the batter evenly between the prepared pans and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake
Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Make the Frosting
In a mixing bowl, beat together the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of frosting on top, then place the second layer on top and frost the top and sides of the cake.
