Sauté chopped onion and ginger in a pot until soft. Add cubed butternut squash and vegetable broth. Simmer for 20 minutes. Blend until smooth, stir in coconut milk, salt, and pepper, and heat through.

Main Course

  1. 3

    Fillet Mignon with Asparagus

Season the filet mignon with salt and pepper. Heat olive oil in a skillet and sear the fillets for 4-5 minutes on each side for medium-rare. In a separate pan, sauté asparagus with balsamic vinegar until tender, about 5-7 minutes.

Dessert

  1. 4

    Chocolate Mousse

Melt dark chocolate in a double boiler. In another bowl, whip heavy cream until soft peaks form. Fold melted chocolate and vanilla extract into the whipped cream. Chill for at least 1 hour. Serve topped with fresh berries and mint leaves.
