Method

Mushrooms Preparation

  1. 1

    Sauté the Mushrooms

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the wild mushrooms, thyme, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and golden brown.

Truffle Hollandaise Preparation

  1. 2

    Make the Hollandaise Sauce

In a heatproof bowl, whisk together the egg yolks and lemon juice. Set the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens. Slowly drizzle in the melted butter while whisking until the sauce is smooth. Stir in the truffle oil and salt, and keep warm.

Brioche Preparation

  1. 3

    Toast the Brioche

In a separate skillet, melt the butter over medium heat. Add the brioche slices and toast them on both sides until golden brown.

Assembly

  1. 4

    Plate the Dish

Place the toasted brioche slices on a plate. Top each slice with the sautéed mushrooms, then drizzle generously with the truffle hollandaise sauce. Finish with a sprinkle of grated Grana Padano and chopped parsley.
