Marinating the Sablefish

Prepare the Marinade
In a bowl, mix together the miso paste, sake, and soy sauce until smooth. Place the sablefish fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 1 hour, preferably overnight.

Cook the Fish
Preheat the oven to 400°F (200°C). Remove sablefish from the marinade and place on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the fish flakes easily with a fork.

Serve the Dish
On a plate, arrange the fingerling potatoes, sautéed vegetables, and top with the baked sablefish. Drizzle the mushroom dashi over the top and serve immediately.
