Balsamic Strawberries

Method

Cheesecake Preparation

  1. 1

    Prepare the Cheesecake Batter

In a large mixing bowl, combine the mascarpone cheese, cream cheese, and granulated sugar. Beat until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, flour, and a pinch of salt until fully combined.

  2. 2

    Bake the Cheesecake

Preheat the oven to 325°F (160°C). Pour the cheesecake batter into a greased springform pan. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Let it cool in the pan for 10 minutes before removing the sides of the springform pan. Refrigerate for at least 4 hours or overnight.

Balsamic Strawberries Preparation

  1. 3

    Prepare the Balsamic Strawberries

In a bowl, combine the fresh strawberries, balsamic vinegar, and honey. Toss gently to coat the strawberries and let marinate for 30 minutes. Before serving, add torn basil leaves.

Crispy Wafers Preparation

  1. 4

    Make the Crispy Wafers

In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Press the mixture into the bottom of a baking sheet lined with parchment paper. Bake at 350°F (175°C) for 10-12 minutes or until golden brown. Let cool and break into pieces.
