Method

Marinating the Strawberries

    Prepare Strawberries

    Wash and hull the strawberries. Slice them in half and place them in a bowl.

    Combine Ingredients

    In a small bowl, combine the balsamic vinegar, honey, and chopped mint. Pour the mixture over the strawberries and gently toss to coat.

    Marinate

    Cover the bowl and let the strawberries marinate in the refrigerator for at least 30 minutes.

Making the Balsamic Reduction

    Combine and Heat

    In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat.

    Reduce

    Reduce heat to low and let it simmer for about 15-20 minutes, or until it thickens and coats the back of a spoon.

    Cool

    Remove from heat and let it cool down before using.

Making the Vanilla Ice Cream

    Heat Cream Mixture

    In a medium saucepan, combine heavy cream, whole milk, and sugar. Heat over medium until the mixture is warm and sugar is dissolved.

    Temper Egg Yolks

    In a separate bowl, whisk the egg yolks. Gradually whisk in about a cup of the warm cream mixture to temper the yolks.

    Thicken

    Pour the tempered yolks back into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Cool Mixture

    Remove from heat and stir in the vanilla extract. Let it cool, then cover and refrigerate until completely chilled.

    Churn Ice Cream

    Churn the chilled mixture in an ice cream maker according to manufacturer's instructions. Freeze until firm.
