Method

Crust Preparation

  1. 1

    Make the Dough

In a bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

In a large bowl, toss the sliced pears with maple syrup, cinnamon, and lemon juice. Set aside to marinate while you prepare the crust.

Assembly and Baking

  1. 3

    Assemble the Galette

Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet. Arrange the marinated pears in the center, leaving a 2-inch border. Fold the edges of the dough over the pears, pleating as necessary.

  2. 4

    Bake

Bake for 35-40 minutes or until the crust is golden brown and the pears are tender. Let cool slightly.

Blood Orange Drizzle Preparation

  1. 5

    Make the Drizzle

In a small bowl, whisk together the blood orange juice and powdered sugar until smooth. Drizzle over the warm galette before serving.
