    Sauté Aromatics

    In a large pot, melt the butter over medium heat. Add the shallots and garlic, and sauté until the shallots are translucent, about 5 minutes.

    Add Lobster and Tomato Paste

    Stir in the lobster meat and tomato paste, cooking for another 3 minutes.

    Deglaze with Cognac

    Pour in the cognac, scraping the bottom of the pot to deglaze, and let it simmer for 2 minutes.

    Add Stock and Simmer

    Add the fish stock, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

    Add Cream

    Stir in the heavy cream and heat through without boiling. Adjust seasoning to taste.

Serving

    Garnish and Serve

    Ladle the bisque into bowls, add a dollop of crème fraiche, and sprinkle with chopped chives before serving.
