Method

Preparation of Sea Bass

    Marinate the Sea Bass

    In a bowl, mix olive oil, lemon juice, chopped thyme, parsley, minced garlic, salt, and pepper. Rub this mixture all over the sea bass and let it marinate for at least 30 minutes.

    Chargrill the Sea Bass

    Preheat the grill to medium-high heat. Grill the marinated sea bass for about 5-7 minutes on each side, or until the flesh is opaque and flakes easily. Remove from the grill and set aside.

    Cook the Lentils

    In a pot, cook black lentils in boiling water for about 20-25 minutes until tender. Drain and set aside.

    In a skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, and sauté until softened. Add corn kernels and cooked lentils, season with salt and pepper, and stir to combine. Cook for an additional 5 minutes.

    In a baking dish, combine cherry tomatoes, olive oil, minced garlic, and salt. Roast in a preheated oven at 275°F (135°C) for about 2 hours until the tomatoes are soft and caramelized. Stir in fresh basil before serving.
