Lamb Sirloin

    Prepare the Lamb

    Preheat the oven to 400°F (200°C). In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub this mixture all over the lamb sirloin. Sear the lamb in a hot skillet for 3-4 minutes on each side until browned, then transfer to the oven and roast for 15-20 minutes or until it reaches the desired doneness. Let it rest for 10 minutes before slicing.

Gratin Dauphinoise

    Make the Gratin

    In a saucepan, heat the heavy cream with minced garlic, salt, and pepper until just simmering. Layer the sliced potatoes in a greased baking dish, pouring the cream mixture over each layer. Top with grated Gruyère cheese. Bake at 375°F (190°C) for 45-55 minutes until the potatoes are tender and the top is golden brown.

Roast Root Vegetables

    Roast the Vegetables

    Toss the chopped carrots and parsnips with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven at 400°F (200°C) for 25-30 minutes until they are tender and caramelized.

Grilled Broccolini

    Toss the broccolini with olive oil, salt, and pepper. Grill over medium heat for 5-7 minutes until tender and slightly charred.

Demi-Glace

    Prepare the Demi-Glace

    In a saucepan, combine beef stock, red wine, minced shallots, and thyme. Simmer for 20-25 minutes until reduced by half. Strain the mixture and whisk in butter before serving.
