Braised Beef Shank

Prepare the Beef
Season the beef shank with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef shank until browned on all sides, then remove and set aside.

Deglaze with Cognac
Pour in the cognac, scraping the bottom of the pot to release any browned bits. Bring to a simmer.

Add Broth and Herbs
Return the beef shank to the pot, add beef broth, thyme, and bay leaves. Bring to a boil, then reduce to a low simmer.

Braise
Cover and cook for about 2.5 to 3 hours or until the beef is tender and falling off the bone.

Cook Potatoes
Peel and cut the russet potatoes into uniform chunks. Boil in salted water until tender, about 15-20 minutes.

Mash and Mix
Drain the potatoes and return to the pot. Add butter, heavy cream, and salt. Mash until smooth and creamy.
