Prepare the Granita
In a saucepan, combine water and sugar. Heat over medium heat until the sugar dissolves. Add the lemon juice and stir well. Pour the mixture into a shallow dish and place in the freezer. After 30 minutes, use a fork to scrape the mixture to create a granita texture. Repeat this process until the mixture is fully frozen and fluffy.

Shuck the Oysters
Carefully shuck the oysters, keeping the meat in the deeper shell half. Place them on a platter filled with crushed ice to keep them cool.

Prepare the Accompaniments
Grate fresh horseradish and set aside. Prepare lemon wedges and have hot sauce ready for serving.

Serve
Place the shucked oysters on the platter with granita, grated horseradish, lemon wedges, and hot sauce. Serve immediately.
