Make the Mornay Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour and cook for about 2 minutes. Gradually add 1 cup of milk while whisking continuously until the sauce thickens. Stir in 1 cup of grated Gruyere cheese until melted and smooth. Season with salt and pepper. Set aside.

Prepare the Sandwich
Spread a layer of Mornay sauce on one slice of the sourdough bread. Place the prosciutto cotto on top, followed by another layer of Mornay sauce and a slice of Gruyere cheese. Top with the second slice of bread.

Cook the Sandwich
In a skillet, melt 1 tablespoon of butter over medium heat. Add the assembled sandwich and cook until golden brown on one side, about 3-4 minutes. Flip and cook for another 3-4 minutes until the cheese is melted and the bread is golden.

Assemble the Croque Madame
Place the cooked sandwich on a plate, top with the fried egg, and serve with a side of mixed greens.
