Pastry Fillings and Toppings

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, mix warm milk with sugar and yeast. Let it sit for 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine flour and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together activated yeast mixture, eggs, and melted butter.

  4. 4

    Knead Dough

Pour the wet mixture into the dry ingredients. Mix until a dough forms and knead on a floured surface for about 10 minutes until smooth.

  5. 5

    First Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Pastry Assembly

  1. 6

    Shape Pastries

Punch down the risen dough and divide it into portions for different pastries (such as croissants, danishes, and rolls).

  2. 7

    Fill and Roll

For croissants, roll dough into triangles, place chocolate chips or cream cheese filling, and roll tightly from the base to the tip.

  3. 8

    Second Rise

Place shaped pastries on a baking sheet, cover, and let them rise for 30 minutes.

  4. 9

    Bake

Preheat the oven to 375°F (190°C). Bake pastries for 15-20 minutes or until golden brown.

  5. 10

    Finish and Serve

Allow pastries to cool slightly, then dust with powdered sugar or serve with fruit preserves.
