Method
Chocolate Mousse Preparation

Melt Chocolate
In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Whisk Eggs
In a separate bowl, whisk the eggs and granulated sugar together until light and fluffy.

Combine Mixtures
Fold the melted chocolate mixture into the egg mixture until well combined.

Whip Cream
In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no streaks remain.

Set in Molds
Transfer the mousse to dome-shaped molds and chill in the refrigerator for at least 4 hours, or until set.
Strawberry Consommé Preparation

Prepare Strawberries
In a saucepan, combine strawberries, granulated sugar, and water. Bring to a simmer and cook for 10 minutes.

Strain Mixture
Remove from heat and strain the mixture through a fine sieve, pressing the strawberries to extract as much liquid as possible. Stir in lemon juice and let cool.
Mint Crystals Preparation

Prepare Mint Syrup
In a small saucepan, combine fresh mint leaves, granulated sugar, and water. Heat gently until sugar dissolves, then let it steep for 30 minutes.

Make Crystals
Strain the syrup and spread it on a baking sheet. Let it dry completely, then break into crystals.
Assembly

Plate the Dish
Unmold the chocolate mousse domes onto serving plates. Drizzle with strawberry consommé, and garnish with fresh berries and mint crystals.
