Method

Cooking Octopus

    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for 45 minutes. Remove from heat and let cool.

    Char the Octopus

    Once cooled, cut the octopus into manageable pieces. Heat a grill or grill pan over high heat. Toss the octopus in olive oil, salt, and pepper, and grill for 3-4 minutes on each side until charred.

Making Salsa Verde

    Blend Salsa Verde

    In a food processor, combine parsley, cilantro, garlic, capers, lemon juice, and olive oil. Blend until smooth and season with salt to taste.

Preparing Calabrian Chili Aioli

    Make the Aioli

    In a bowl, mix mayonnaise, Calabrian chili paste, minced garlic, lemon juice, and salt until well combined.

Cooking Crispy Potatoes

    Prepare Potatoes

    Preheat the oven to 425°F (220°C). Toss baby potatoes with olive oil, salt, and pepper, and spread them on a baking sheet.

    Bake Potatoes

    Bake in the preheated oven for 25-30 minutes, or until golden and crispy.

Charred Tomato

    Char the Tomatoes

    Toss the Roma tomatoes in olive oil and salt. Grill or roast in the oven until slightly charred, about 10-12 minutes.
