Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking soda, cinnamon, ginger, and salt.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Add Carrots and Nuts
Fold in the grated carrots and chopped walnuts (if using).

Divide the batter evenly between the two prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
