    Prepare the ingredients

    Trim the stem ends of the Brussel sprouts and cut them in half. Peel and slice the Cipollini onions. Cut the bear and flower bacon into small pieces.

    Cook the bacon

    In a large skillet over medium heat, add the bear and flower bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the fat in the skillet.

    Sauté the onions

    In the same skillet, add the Cipollini onions and sauté until they begin to caramelize, about 5 minutes.

    Caramelize the Brussel sprouts

    Add the Brussel sprouts to the skillet with the onions. Drizzle with olive oil, season with salt and black pepper, and toss to combine. Cook for another 10-15 minutes, stirring occasionally, until the Brussel sprouts are golden brown and tender.

    Combine and finish

    Add the cooked bacon back to the skillet, drizzle with balsamic vinegar, and toss everything together. Cook for an additional 2 minutes.

    Serve

    Remove from heat, top with grated Parmesan cheese, and serve warm.
