Burger Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

    Form the Patties

    In a bowl, combine the ground beef, salt, and black pepper. Form into two patties.

    Grill the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4 minutes on one side, flip and add aged cheddar on top. Cook for an additional 3-4 minutes until the cheese is melted and the burger is cooked to your desired doneness.

    Toast the Buns

    Lightly toast the burger buns on the grill or in a toaster.

Garlic Aioli Preparation

    Make the Aioli

    In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt to taste. Mix well and set aside.

Assembly

    Assemble the Burger

    Spread garlic aioli on the bottom bun, add the burger patty with melted cheddar, top with crispy bacon and pickled onions. Close with the top bun.

    Serve

    Serve the burger with fries or mixed greens on the side.
