Butternut Squash And Pumpkin Veloute Recipe

Preparation

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

    Cook the Squash

    Add the butternut squash and pumpkin puree to the pot. Stir well and cook for another 5 minutes.

    Add Broth and Seasonings

    Pour in the vegetable broth, and season with salt, black pepper, and nutmeg. Bring to a boil, then reduce heat and let it simmer for about 20 minutes, or until the squash is tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Stir in the cream or coconut milk and heat through.

Serving

    Prepare the Garnish

    In a small bowl, mix together the apple cider, pomegranate seeds, and chopped nasturtium leaves.

    Serve

    Ladle the veloute into bowls, drizzle with nasturtium crema, and top with the apple cider and pomegranate mixture. Enjoy!
