Beef

Method

Beef Preparation

  1. 1

    Prepare the Beef

Remove the double beef striploin from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your grill or skillet over medium-high heat. Season the beef generously with salt and black pepper on all sides.

  2. 2

    Cook the Beef

Add olive oil to the grill or skillet. Once hot, place the beef striploin on the heat. Cook for about 4-5 minutes on each side for medium-rare, or until the desired doneness is reached. Remove from heat and let it rest for 10 minutes before slicing.

Peppercorn Sauce Preparation

  1. 3

    Make the Sauce

In a saucepan, melt the butter over medium heat. Add the minced shallots and cook until translucent, about 2-3 minutes. Stir in the crushed peppercorns and cook for another minute.

  2. 4

    Add Broth and Cream

Pour in the beef broth and bring to a simmer. Let it reduce by half, which should take about 5-7 minutes. Lower the heat and stir in the heavy cream and Worcestershire sauce. Cook until the sauce thickens slightly, about 3-4 minutes. Season with salt and pepper to taste.

Serving

  1. 5

    Serve

Slice the rested beef striploin against the grain and serve it on plates drizzled with peppercorn sauce.
