Prepare Cavatelli

Make the Dough
In a large bowl, mix semolina flour, all-purpose flour, and salt. Gradually add beet juice and water until a dough forms. Knead for 5-7 minutes until smooth. Cover with a towel and let rest for 30 minutes.

Shape the Cavatelli
Roll the dough into long ropes about 1/2 inch thick. Cut into 1-inch pieces. Use a fork to press down on each piece to create the cavatelli shape. Set aside.
Cook Cavatelli

Boil Water
Bring a large pot of salted water to a boil. Add the cavatelli and cook for 3-5 minutes until they float to the top. Drain and set aside.
Prepare Brown Butter Sauce

Brown the Butter
In a large skillet, melt the butter over medium heat. Add minced garlic and sage leaves, and cook until the butter turns golden brown and the garlic is fragrant, about 5-7 minutes. Season with salt and black pepper.
Combine and Serve

Finish the Dish
Add the cooked cavatelli to the brown butter sauce and toss to coat. Serve topped with chopped pistachios, burrata cheese, and fresh parsley.
