Method

Prepare the Beef

    Sear the Beef

    Season the beef tenderloin with salt and black pepper. Heat sesame oil in a skillet over high heat and sear the beef on all sides until browned (about 2-3 minutes per side).

    Chill the Beef

    Remove the beef from the skillet and let it cool for a few minutes. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

    Slice the Beef

    Once chilled, use a sharp knife to slice the beef into thin pieces (about ¼ inch thick).

Make Truffle Ponzu

    Combine Ingredients

    In a small bowl, mix together soy sauce, yuzu juice, truffle oil, rice vinegar, and mirin until well combined.

Prepare Garnish

    Prepare Garlic Chips

    Thinly slice the garlic cloves. Heat vegetable oil in a small pan over medium heat and fry the garlic slices until golden brown. Remove and drain on paper towels.

    Slice Scallions and Chilies

    Thinly slice the scallions and chilies. Shred the daikon radish.

Serve

    Plate the Dish

    Arrange the sliced beef on a serving plate. Drizzle with truffle ponzu sauce, and top with scallions, chilies, daikon, and garlic chips.
